If the bike is sold out everywhere, that's because it is selling. If the bike is selling, the dealer is less inclined to discount. If the local shop has your size and your color and is selling it for a reasonable price, just buy it and be done. Otherwise, you'll spend that extra $100 of your own time searching the web, driving to other shops, etc. Just buy the bike you want for the price you offered and they accepted. It's tough to have the following exchange:

"Would you sell it for $2100 out the door?"
"Ok"
"Wait, what about $2000?"
