There's not a whole lot of difference in travel between 7 speed & 8-10 speed travel. Free hub bodies are only about 4mm longer between the 2.
IF you are using a mis-mash of parts, you may have the cassette/freewheel spaced too far from the DO?

For the front, you need to find out what BB the crank specifies to use with xx chainline.
If you are dealing with older parts, that spec may not be readily available and thus it becomes trial & error.

I flip bikes on CL and run into that problem somewhat frequently.
I simply bought about 5? different (inexpensive) BB's of varying sizes. I take my best guess and adapt from there.
