Well... I got her built up!
I decided to go the resto-mod route. I put brand new Ultegra 11 speed on her. Except for the crank... that's a new VO 50.4 BCD 46-30 unit.
Here's how she came out:
Sweet. I'm with you; I would have put a new group on the bike as well. That way you don't worry about wasting old parts that are hard to find and you have a bike that just works well. I really like that VO crank and Brooks saddle. Those are both nice touches on an old bike. Plus the gearing on the VO crank is very smart.
