Steel mountain bike frame - thoughts on conversion?

Hey y'all, fairly new here, I mainly read the C&V section, so sorry if this a commonly asked question.

I'm in the middle of my first big bike project, and I've enjoyed the process enough that while sanding down the paint for hours and hours, I found myself planning out my next build.

I've never owned a single speed or a fixed gear, and I'd really like to convert an old frame and build a rear wheel around a double threaded track hub, but I've been struggling to decide on a frame and fork.

It occurred to me that a vintage old mountain bike made of steel, before they started putting in suspension forks might be the perfect frame to convert to a single speed, as it would probably be as close to city-proof as you could get, right? I'm talking mainly about durability.

I'm new to thinking about bikes without gears so I may be barking up the wrong tree here, but how many of you guys have ridden something like what I've described?
