Welcome to BF and good luck with your hunt! Just a personal view, but... I don’t see carbon fiber as the “do it all” material. It’s not known for accepting racks, so that’d limit touring to daypack-on-your-back credit card touring and that knocks you out of “do it all” right there. I think a beefy hybrid (which might or might not take racks) or an adventure touring bike might be “do it all.” As was said above, it’s all about trade-offs. There'll be lots of widely varying opinions on this question, though.
