chainring-cog ratio sets the middle of the range .. i think a roller brake is optional , brake onto rim certainly is common..

a dual f/r drum brake hub combination is all weather Sturmey-Archer 5 speed is a good range ,
3 speed is proven reliable as well the same 3 are 234 of the 5..
Shimano's roller brakes are, IMO, inferior to S-A drum [25 years of use on mine]

and drum brake makes steel rims fine. though if bothering with a hand build why not use aluminimum?
I've put my nuvinci N360 through the wringer since bringing this bike home. It never fails to deliver, especially from stopped up hills. After a few weeks of regular use, a tiny tightening of the shift cables is probably a good idea, but refer to reputable LBS for that job.

If you put the N360 on back, you will need to stick to rim brake in back. You can put (if the bike accepts it) a disc on the front, though. The N360 i believe only comes in a 36 spoke hole pattern and 2 cross spoke pattern only. An up side is there is no dishing on the spokes at all, it is symmetrical. You will notice this when riding, at least i have, and it gives the whole bike a very stable & balanced feel.

You might want to look into a bottle dyno & tires that have a track for the bottle dyno, and hook up some lights or device charging (or both).
