You don't get as good a deal, I find, but they offer thing such as lifetime adjustments, 30 day test drive and such.
So my question is, how important is something like lifetime adjustments. I figure that the first one will probably be the most important and I will learn how to do it myself afterwards. Or, will they do things that I could never do?

Go with the bicycle you like the best ... don't let any sort of "free adjustments" offers sway your decision.
But if you are interested in those "free adjustments" ask them exactly what that includes and what's involved.
And remember "lifetime free adjustments" are only available to you as long as the store is open. My father was in that situation. Bought a bicycle with "lifetime free adjustments" ... turns out "lifetime" was less than a year because the shop closed not long after he bought the bicycle. And they are also only available to you as long as you're in the area. If my shop in Winnipeg where I got my Marinoni had offered "lifetime free adjustments" it wouldn't do me much good over here in Australia.
