Lookin' for new versatile tires for my pweddy Raleigh One Way

Since my vittoria randonneur cross (700 x 35's) are the most difficult tires in the galaxy to mount on rims, I'm looking for a nice versatile tire to take their place on my 08' Raleigh One Way, so that I don't have to fear flats on the road.
I'd LOVE to get some cream tires or even brown. Schwalbe Delta Cruisers seem a little heavy. I don't mind going a little smaller in the tire dimension, but I still would like a little versatility.
Any suggestions on what would be great tire on this bike. It looks like I'll be moving to the Cape May, NJ area very soon and will probably be using this bike for lots of riding situations. It currently has a Nexus asp hub on it, but not sure if I'll be keeping it on or going back to SS.
peace
