there was a kickstarter project a while back. the best thing would be to have minimal storage that is continuously overwritten.....until there is an incident in which case you have the lat 5' or 30' or whatever. having to record and manually delete is a pain.
also, battery life for most of these cameras won't last a long ride.
got my hands on a few shimano cameras. i've played with contours and go pros before. i dislike the form factor of the go pro...but for your case i think you WANT people to notice the camera. cdr has pointed this out before but behavior changes when people know or at least think they are being recorded (he had some rear-mounted camera on a car, i think).
shimano cm-1000 is nice but not perfect.
