When my wife's grandmother passed away, it fell upon me to continue her family recipe for Ukrainian holiday bread (because I was the only one capable). I taught my wife one year and the next, when I let her do it, it had a bagel texture and density. The following year, I watched closely as she did it and I found she was adding water that was too hot to the yeast and killing most of it.
