Yes, making a conscious effort to bend your elbows is good, and don't forget about your shoulders ... they need to drop too. I struggle with both of those things. I find myself riding with my elbows locked and shoulders up around my ears.
The saddle issues could still be a matter of getting used to it, getting the saddle time, fitness and core strength. Are you riding most days each week?
And the bike coop idea is a good one.
