One of the reasons I use an Ortlieb bar bag is because it's so quick to get off and on the handle bars. The Klickfix mount is great and it's no trouble to take the bar bag with me for even the shortest time off the bike.
My saddlebag isn't simple to get off my bike so it's reasonably thief proof and I've always thought that a motion sensitive alarm would scare away anyone trying to open the bag and take something.
