I'm sure you are aware of it, but just in case not: lactase enzyme sold OTC (USA brand name, Lactaid) works remarkably well to enable the consumption of dairy products by those who are lactose intolerant. I keep some of the "Ultra" tablets in individual foil packets on me at all times and enjoy milk, café au lait, ice cream, and best of all, cheese without any repercussions despite essentially no internal lactase production.
