Touring crankset for racing bike?

Ok, my new hybrid looks like it was made for dirt roads and hauling lots of luggage, but it is heavy, very heavy, so for touring on pavement I project record low speed. Looking at my old favorite, a Bridgestone RB-1 (Italian racing geometry), I notice it has one set of braze-ons beside both front and rear dropouts: I think I can mount a rack on front and rear. I notice on ebay a touring crankset from a Bridgestone RB-T that still has all its teeth and I think, I can put this on my RB-1 and go on a long (paved road) tour. Am I nuts for considering this? If I do this, should I get the used Bridgestone crankset or a new model of some other brand?
