crank size: this is fit dependent and not relevant to the question. typical crank arm size is 170, 172.5, or 175 depending upon fit factors.
chain rings: I think this is what you're referring to when you ask about crank size, but not really sure. typical setup is a double with 53/39, this suits most applications.
cassette: I prefer an 11x28 on everything for simplicity
as for as a 14x28 goes, that's junior gearing and I know juniors that win P12 races on it, so it actually doesnt limit speed if used correctly except in very specific circumstances. for your stated purposes (fast rides or fast century rides), your current gearing is not limiting you, your legs are.
