Exact same thing happened to me.
Couple months ago, I put on a new set of 25 mm Michelin Pro 4s. These replaced a set of 25 mm Conti GP4000s. On the workstand nothing rubbed. However, the rear tire was slightly taller than the old Contis and rubbed up against the arch of the brake caliper on the ride to work the next morning. I didn't notice at first. But as I went down the road that I have been on thousands of time I could feel the drag and knew something was rubbing. Tire took a couple commutes to wear down enough to completely clear the brakes.
