I have a pair of Ortlieb Rollers with some absurdly large number of miles. I've used them for groceries, used when I worked as a bike delivery person, used for a few tours and used for commuting and still look great. They are huge, durable and great to use. The mounting mechanism works great and goes on and off in seconds
I also have a pair of Jandd mini-mountain that I picked up used. The mounting is a bit of a pain to put on and off (I don't like to use them on a multi-modal commute because it can take a full 30 seconds to mount and remove them, 30 seconds is longer than it sounds when you have a bus waiting for you). That aside, the mounting is one of the most secure I've seen, I'd trust it over the ortliebs on rough terrain.
I have a pair of old Kirtland panniers that I've just beaten to pieces. Not as durable as the Jandd or the Ortlieb.
