I think that Trek 8.3 DS is pretty much perfect for the riding you're talking about doing. Should hold up fine. I was going to suggest a 29er mountain bike something like a Marin Muirwoods. Marin Muirwoods 29er Bike - 2014 at REI.com

Or get a road bike and a rack for your car and head out to the country and ride.
