Seems my '84 project has taken on a new dimension. I am considering new wheels so I can convert the 6sp freewheel to a 7sp cassette. Ideally I would like to use Shimano 105 NOS hubs with rims that are suitable for my lack of flexibility/weight, in other words - touring rims vs racing rims. Couple of questions:
1. Any thought on wheels? Peter White has a Velocity Chukker, Bright Silver Finish, which looks like it would be suitable, cost around $85.00
2. My frame has a spacing of 123mm. Can I cold set the frame, per Sheldon Brown, the 3mm to make this work?
3. If I can't or shouldn't cold spread the frame - are there any quality "vintage" hubs that I should consider and have a wheel builder re-lace the stock Araya 700c rims with the new hubs/spokes.
In the end I would like to use the 6p stock wheels for indoor riding and the new 7sp cassette wheels for light, local touring. My guess is that two rims, hubs, spokes, and labor will cost around $225 per wheel.
