Going through stuff to take to T town. Same problem, same solution. I have not started grouping by mfg and type (Suntour RD). I am thing along the lines of groups for drive trains. I also put all the brake stuff together, groups of levers, calipers, pads. Cranks are a problem due to space required.
On the other hand, parts targeted for a frame are in one box labeled with the frame ID. Even leftover or potential parts are put in that box. I have optional pedals for the Duet that are in the box with optional middle ring, 7 spd FW and index shifters for post repaint assembly.
Handle bars are a pain. Mine are nested, some complete with stem, brake levers and tape, in one of those Costco fold top bins. That works well too. I have bins labeled drive train for all the sub groupings that apply. Accessories have their own box. The pedals, handle bars brakes, stems, posts and saddles are in their own box for now. If I run out of room, they will be separated.
Haven't solved the hanging wheel issue yet. Not how to hang them but the location.
