you out can use any derailleur with friction shifting. Just get matching chain with the cassette.

8 speed it best if you're only doing 4 to 8 miles a week. 8 speed parts are MUCH cheaper, and some argue that they are more durable as they use a thicker chain. IMHO a 10 speed chain is probably just as strong.

8 speed cassette is about $20, 8 speed chain KMC with quicklink is about 15. 8 speed derailleur is around $30-40 ( shimano Claris). The Shimmano Claris is good looking, light, and works flawlessly for the price. It can also shift up to 32t. I currently use it and never had problems, I commute 80 miles a week.

If you have narrow wide chain it's probably a 10 speed, 8 speed chain will fine since you'll be running it single up front.
