Bikes: A bunch of old bikes and a few new ones

Cornering can be treacherous regardless of which tire you run in the wet. Your internal gyroscope works great in the dry keeping you from leaning the bike too hard but that same gyroscope doesn't work anywhere near as well when the ground is wet or you are going over dirt, leaves, etc. I'd keep the bike more upright than normal when turning in those sorts of conditions. I doubt a tire will make a huge difference given that you're running pretty good tires. Since you're riding a cross bike, you could ride a bit fatter tire (say a 32c) at a bit lower pressure; that will help not only with cornering in the wet but will also help your wheels hold up.
