I see several sources that say the screen dimming is tied to Auto Lock settings. Have you tried setting it to Never?
Ex:
I've thought about doing that but it's not worth giving up the security of the auto lock feature. I guess I could turn it off just while I'm on my ride but it would be kind of a PITA to try to remember to reset it to auto lock and my memory isn't what it used to be.
