I'd go with the 60. A 56 cm frame sounds pretty small for someone who's 6'3".

That said, these numbers actually don't mean much. Usually they measure the length of the seat tube, but this doesn't really tell you anything about the frame (sometimes from center to center, sometimes from center to top, sometimes from center to 'virtual top tube').

Instead, look at the REACH and the STACK of the frame. Compare it with the reach and stack of your current bikes.

But, all of that said, 60 usually is about right for somebody of your height.
