I carry lunch every day. Fruit, veggies, meat, leftovers. Each is packed in appropriate container - Tupperware, baggie etc., then placed in a plastic grocery bag and stuffed in the pannier along with the day's clothes. I learned to use the separate bag approach after a lunch leak incident several years ago. A leak may not happen often but when it does you'll be glad you took the additional precaution of the plastic bags.
