I'm probably in the minority on this. I like to do it because it's much easier to get the clamp strap fully covered. And get the wraps right tight to the clamps.
Plus, those somewhat fragile Campy hoods, you know. I find it easy, too. Other than you have to disconnect your cables but that has never bothered me.
You may be in the minority but certainly not alone.
I take it a step further by wrapping the bars OFF the bike: It's a lot easier to wrap them in my lap vs. trying to steady a bike while wrapping with my "other" two hands, and it's virtually no effort to remove the stem from the steerer once the levers are freed. It yeilds the tightest, most uniform wrap possible for me.
