Looks like a fun commuter project, and I think your choices seem fine. However, is there any reason you're married to the idea of a freewheel? Especially if you want to play with gearing options, a rear cartridge hub seems better, and shouldn't be significantly more expensive.
Honestly, because I don't know whether the rear frame is wide enough to move to a modern cassette and the idea of cold setting freaks me out just a little. I guess I should measure? I already own a Shimano lockring tool. I am assuming the only way to know if a cassette hub will fit is to pull out a ruler. Should I have to change the derailleur for that upgrade?
