When I speak of professionals I'm talking about bakeries or restaurants, NOT Mrs Smith, or any other processed and packaged food product coming out of a supermarket or convenience store. Ewwwwww.
And whereas many professional kitchens often will use cheaper ingredients, maybe artificial coloring or flavoring, and maybe even preservatives, no sane home cook even has any of those chemicals in her kitchen. So from a healthy eating standpoint, we aren't in the same boat AT ALL.
Finally, to be sure, there are many experienced home cooks who can cook circles around some professional chefs. So your all-inclusive reverence for professionals in the kitchen is clearly not shared by yours truly.
