That's pretty impressive that they've sold all of their entry-level bikes, unless they didn't have much to begin with. Most manufacturers/brands sell something for under $1000, unless it's something European. Did the shop(s) try to sell you ANYTHING? Did they let you know when they would have more inventory on the floor? What general area do you live? How many shops are nearby?
