Your Pedalroom photos show your GS10 mounted to your fork. This is why you're not seeing cadence. Mount it on your non-drive side chainstay with the magnet on your rear wheel and crankarm (non-drive side), make sure they're aligned, watch for the blinking green light when the magnet goes by the unit and you should be in a better place.
My GS10 is mounted on the NDS crank and chain stay, with the magnet on the rear wheel.. My garmin is set up on my CAAD10 (which does not have a pedal room)

When you turn your garmin on does it find the GS10? Push the button on the side of the GS10, hold the bike up, spin back wheel and make sure the light blinks each time the magnet passes, then turn crank and make sure that also makes the light blink. If each and every test is successful then contact Garmin support.
This is a great thought, no idea why I hadn't thought about it. I'll fiddle with it later.
