This review of the STX-RC hub looks promising, from wiggle.co.uk:

I have a Mercian road bike (1992) 7 speed with a Shimano 600 rear hub and a uniglide freehub body. This unit is a direct replacement allowing use of the hypergilde cassettes. The dust seal on the cones works fine as well.

Another option is just to use 8-speed spacers with the Uniglide sprockets. This will give me perfect 5.0mm spacing for the 7-speed RSX shifters going on the build.
