Of those already mentioned, I think the Rivendell and Raleigh Int'l would fit the bill though we're likely talking two very different price points. I have a Riv Romulus (lower-budget Ram), and it fits 38mm tires with fenders and is a very comfortable, all-day rider. I also have a couple of Int'ls, and you can get them down to 21-22 lbs with lightweight components. In terms of new bikes, two not yet mentioned (and in the same price range) are the Soma Grand Randonneur and and V-O Pass Hunter.
