You probably ride fast enough, but I totally understand. From my experience a cheap set of 32 spoke rims was way worse in cross winds when compared to my 50mm with 16 spokes. Do you try and "tune" your parts, are just buy lighter? Tubulars aren't bad, and can be way lighter! If you want to drop weight, Sram red is the path to do it.
