Bikes: 06' Trek 2100

The bike is a mid 90's or so Miyata Triplecross that I recently acquired. Right now, it works ok, but I want to strip it down, clean the whole frame up and build it back up with some new and improved components. It has a triple crank, 7 speed casette, some old rusted canitlever brakes that definitely need replacing, not sure on either of the deraillers, 700x35C wheels, and the typical Shimano 7 speed shifters and brake levers that need replacing as well. I am not sure whether I should go with road components or mountain components?? Any suggestions for this?? Also, what about the wheels, does anyone have any suggestions for some decent priced wheels in this size?? I mostly do road cycling on my 06' Trek 2100, so I know the Shimano road line very well, but I don't know their other components to well yet. So here is a list of things I am gonna need to replace, but I have to figure out what is going to work and what I can afford first!
Brakes
Brake Levers
Brake Cables
Shifters
Shift Cables
F & R Deraillers
BB
Crank - Preferably a double
Casette - At least an 8 speed
Chain
Wheels w/ Hubs
