I doubt if most race car drivers commute to work in a vehicle with similar lack of comfort amenities.
Just like cyclists probably don't ride in the drops while commuting to work. There are only three contact points on a bike. If you're reasonably flexible and not fat there's nothing uncomfortable about riding a racing bike as you have multiple hand positions allowing a number of riding postures.

I think hybrid/commuter bikes are comfortable mainly because people don't spend much time riding them.
