Bikes: Raleigh conversion (hours spent making it look like a Pista); Porter Track, Samson Track, Leto Roadie.

If either of the frames you're talking about are the Waterfords you've got listed in your signature (or even if they're not), I'd advise you to think long and hard before you take off the shifter bosses/cable guides/derailleur hanger...are they REALLY slowing you down all that much? Once they're off, that's kind of it. Suppose you find, oh, I dunno, a red Colnago track bike in a dumpster and want to make that your primary fixed ride...wouldn't it be nice to have the option to be able to put gears on again?

If you were ever looking to sell, you'll find a much wider audience with all that crap still on there.

I've kept the Suntour shifters on my conversion. Treechunk runs nickels in their place.

It's your bike, you can do whatever you want...but sleep on it.
