I thru-hiked the Appalachian trail in 2013 and I stealth camped A LOT. Graveyards were great (we usually camped next to a graveyard, never in the graveyard).

I've camped behind gas stations.
I've camped behind a pizza hut.
I've camped behind a Walmart.
I've camped in a parking space at a truck stop.
I've camped on the side of the road in a field.
I've camped on the side of the road in a wooded area.
I've camped just about everywhere it seems.
