If you wanted to run a mixed road/mtb drivetrain, you could get the SL-R780 flatbar shifters. They are Ultegra level flatbar shifters. They will shift all of the 10sp. shimano road gear and if you wanted to run MTB rear gearing, you can run the 9sp shimano mtb RD and it'll shift great. This is what I'm doing on my new bike. I'm running those shifters, DA FD, XTR RD, and a 12-36 SRAM 1070 cassette. Just as long as you don't mix any dynasys stuff, you'll be golden.

I looked at the wheels you are getting, but I decided to get custom. King hubs, DT TK-540 hoops, and DT spokes.
