Bikes: '96 Litespeed Catalyst, '05 Litespeed Firenze, '06 Litespeed Tuscany, '20 Surly Midnight Special, All are 3x10. It is hilly around here!

AFAIK, no one ever made index shifting for 5-speed freewheels (except for the old Schwinn "Stingray Stick Shift" kids bikes) so you have a miss-match between your freewheel and shifters. Also, as noted, by the late 80's 126 mm dropout spacing was nearly universal for road bikes so something was done to your frame.
