I would say the hubs are excellent to rebuild and sell.
Ofmega has fans who covet each individual part they can find.

The tubular rims are a cyclocross bonanza, so selling them should be no problem.
They'll hold the wider 700x35 cross tubulars and be plenty strong enough.

I don't see a down side.
