There are many bike repair manuals out there, as well as many links online for bike repair. Park Tools has an excellent repair/advice link at
www.parktool.com/blog/repair-help. You really need to indicate the year and type of bicycle you're interested in working on. Bikes from the 70's to mid 80's and bikes from the mid 80's to the mid 90's are very different in components. A local library may also have bike repair manuals that would give you an idea of what's out there. Many online videos and forums will have instructions for specific repairs/maintenance for certain era bicycles and types of bikes. A road bike will have different geometry and components than a mountain bike. Here is a link to bike repair/maintenance manuals that may help you find the exact instructions you are looking for.
