Jamis makes a couple of versions of the Quest that come with a triple. Shimano GS rear derailleurs can now take 32T cogs. It's easy to swap out for a mtb rear derailleur and use a 34T cog. If you have a triple, another easy swap is to the Sugino XD crank with 48-36-26. Match this with the mtb rear and you can spin until you fall over sideways. Check the Rivendell site for info about this crank. You need to find a shop or co-op interested in working with you. I agree that it is unproductive to make assumptions/ assertions as to what gearing someone else needs.
