Eventually I ended up with 55. I will probably use 0 offset seatpost and 100-120 mm stem for that. Searching for my ideal position in progress : )

I also talked to someone riding 57, but he's taller. We both agreed: 55 was the one to pick.
I think 57 is no option for an average 1.80m guy, but if you're happy with it, that's cool. You can change a lot with seatpost and stem.
