Part right but you want to let the coffee steep at room temperature for like a day or so. Course ground coffee, strain and filter out the bits.
You'll notice that the cold brewed stuff is sweeter, smoother, and less tongue burny.
Also if you are buying decent coffee you'll notice that cold brewing distinctly brings out the flavors that are described in the tasting notes.
At work we have one of these. It's pretty awesome.
