It's not a century (75 miles), but take a look at Tour de Pines if you haven't. It starts/ends in Itasca State Park. A bit of a drive, especially for me coming from the cities, but well worth it, and only about 90 minutes from the Fargo area.
I've done both the Tour de Pines and Headwaters 100 in years past. Great rides in a beautiful area. The Itasca area is one of our favorites for biking, hiking and canoeing. If you haven't been there recently, large sections of bike trail thorugh the park have been added or renovated over the past year.
