I have frequently ridden like this with my daughter a various girlfriends. I will point out that the passenger will typically lean back so as to centre their weight. It is a bit annoying that this practice is illegal in the states as it make taking a second person much easier.
As far as uneven weight, I am very asymmetrical. My right side is close to 15 pounds heavier. As a result I ride with a noticeable lean to the left; but the bike is still manageable.
