I use Look KeO pedals for day-to-day usage (*). I do like the metal plate in the KeO2 Max (or whatever it's called). The lower level pedals are fine, but definitely not as nice, and the pedals higher than that seem to go for ransom money. I just keep my eyes open for Max's in good used condition.

(*) Though I have been accumulating a stash of quill pedals with the expectation that I will change many/most/all of my vintage bikes back over to clips-n-straps.
