I also agree with the folks that recommend buying a stock LHT, and changing the few parts to meet some of your criteria. If you are not familiar with bike mechanics, component compatibility, and what you really want in a touring bike; it will save a lot of money, and frustration. You might even end up with a better setup.

The savings could be used on racks and panniers, and other needed gear.
