Cameras work by recording light. That's why they don't work as well in the dark (where there isn't much light). Good, modern cameras are actually a lot more sensitive than the human eye but they cost a lot of money. Try taking a photo of the night sky with your cell phone and see how many constellations you can pick out, then imagine trying to do it at 15 bumpy miles an hour on a bike.
