What's it like to ride an organized century?

I've been thinking about the Santa Fe Century in the spring! I've never ridden a century, let alone with 100's of other riders. If this were a goal I would be able to stay focused at the gym and on the mountain (skiing) over the winter.

I usually ride by myself and wonder if I would just be overwhelmed and do something stupid like forget that I'm clipped in and fall in the middle of the road. I can't even imagine watching out for all those other ridders.

How do you carry enough food & water for this type of event or are there stops along the way that provide what you need? How do you dress for an all day event? I can imagine that I would start out cold then be ok then be hot then get cold again, etc. I'm rambling!

I probably have a thousand more questions but I'll stop and look forward to your replies.
